Quick, easy and most important sweetly delicious is Jelly Slice! I know its not the most mature slice you can eat but it sure brings back a lot of great childhood memories. My mum wasn’t a huge make from scratch baker growing up but there were a few slices and tarts that she could and boy oh boy were they good!
Having a massive sugar craving earlier this week and being house bound due the the wet weather on the coast at the moment i rummaged through my pantry and scoured for sweetness.
During my search i found the below:
And to my delight i had all the ingredients to make Raspberry Jelly Slice, i actually had enough to double the ingredients and make a huge week long feasting of Jelly Slice.
All you need for Jelly Slice-
Base:
1 x Marie Biscuits, Crushed
170g Butter, Melted
Filling:
1 x 400g Sweetened Condensed Milk
3 Level Spoons Gelatine
Juice of Half a Lemon
1/4 Cup Boiling Water
Top:
1 x 85g Jelly Crystal Packet (any flavour)
Jelly Slice is also a one bowl and one spatula wonder, so make sure after each step rinse the bowl and spatula and use it for the next step.
To make the Base, pulse biscuits to your desired texture. (I like mine to have a bit of chunk)
Melt the butter in the microwave and stir through the biscuits until they are all coated with butter. Press the mixture firmly into a baking paper lined slice tin and put in the fridge to set. Rinse bowl and spatula.
While the Base is setting, mixture together the boiling water and gelatine until dissolved, add the condensed milk and lemon juice and stir until well combined. Pour over the biscuit base and refrigerate until set, this should take about 2 hours. Rinse bowl and spatula.
Next follow the instructions on the Jelly packet and cool, once cooled pour gently into the slice tin, make sure your filling is set or you will ruin the filling by making it come away from the slice and float in the Jelly- this is not ideal for a yummy looking slice.
The Jelly will need a couple of hours to set, so make sure you start in the morning or make this at night as there is nothing worse than waiting for that first bite.
Mine was well worth the wait and best news is it costs around $10 to make!
