Slice of Heaven..

Quick, easy and most important sweetly delicious is Jelly Slice! I know its not the most mature slice you can eat but it sure brings back a lot of great childhood memories. My mum wasn’t a huge make from scratch baker growing up but there were a few slices and tarts that she could and boy oh boy were they good!

Having a massive sugar craving earlier this week and being house bound due the the wet weather on the coast at the moment i rummaged through my pantry and scoured for sweetness.

During my search i found the below:

And to my delight i had all the ingredients to make Raspberry Jelly Slice, i actually had enough to double the ingredients and make a huge week long feasting of Jelly Slice.

All you need for Jelly Slice-
Base:
1 x Marie Biscuits, Crushed
170g Butter, Melted
Filling:
1 x 400g Sweetened Condensed Milk
3 Level Spoons Gelatine
Juice of Half a Lemon
1/4 Cup Boiling Water
Top:
1 x 85g Jelly Crystal Packet (any flavour)

Jelly Slice is also a one bowl and one spatula wonder, so make sure after each step rinse the bowl and spatula and use it for the next step.

To make the Base, pulse biscuits to your desired texture. (I like mine to have a bit of chunk)
Melt the butter in the microwave and stir through the biscuits until they are all coated with butter. Press the mixture firmly into a baking paper lined slice tin and put in the fridge to set. Rinse bowl and spatula.

While the Base is setting, mixture together the boiling water and gelatine until dissolved, add the condensed milk and lemon juice and stir until well combined. Pour over the biscuit base and refrigerate until set, this should take about 2 hours. Rinse bowl and spatula.

Next follow the instructions on the Jelly packet and cool, once cooled pour gently into the slice tin, make sure your filling is set or you will ruin the filling by making it come away from the slice and float in the Jelly- this is not ideal for a yummy looking slice.

The Jelly will need a couple of hours to set, so make sure you start in the morning or make this at night as there is nothing worse than waiting for that first bite.

Mine was well worth the wait and best news is it costs around $10 to make!

I have been waiting for the perfect moment to share my reviews from our travels earlier this year and i think now is that time. In June 2011, we (Horn, Kylie, Liv, Muller and I) spent 5 weeks over in the USA & Mexico, it was the most amazing experience and the memories will stay with us forever.

We traveled from Queensland to LA to Las Vegas to San Fransisco to Los Cabo to Houston (were we had a problem) to New Orleans to Miami to our final destination New York.

I cannot wait to share the restaurants, street food, hotels and tourist attractions that we experience on our once in a lifetime trip.

 

I’m Back…

If i still have any followers out there, i would like to apologise for my HUGE absence and lack of attention to my beloved blog. The last 6 weeks have been life changing and i am now ready to pick up where i left off. To make up for lost time i will be updating as much as possible and i am really excited to get back into it and i cannot wait to get my hands on Donna Hay’s new book- Simple Dinners.

More purchases from HEAVEN…

The other day while driving through Southport, i couldn’t help myself and made a quick left into Ferry Road Markets. FRM is my favourite place on the Gold Coast, it is picture perfect and everything in side has been picked with thought and love.

I am a tradey’s wife which means i am practically living on tradey time, I am up, dressed, had my fresh juice and  am ready to roll at 7am. I work from home so i don’t I have to drive though traffic to get to work, come 9am I am ready for smoko and by 11am i am starving for lunch. So thinking of ways to not be on a tradey wife eating schedule I thought it might be a good ideas to eat something more substantial for breakfast. When we were in Los Cabos (Mexico) earlier this year i ate this yummy Granola and Yoghurt with half a cream cheese bagel for brekky everyday so since on the GC its coming into Spring/Summer i thought i would give that another go.

I was looking in Sevilo’s (Deli) for some Granola but they didn’t have the Granola i was looking for (i am now thinking that i may have been making this granola up, because i cannot find it anywhere) so i casually strolled into Heaven (Wheel & Barrow). Overwhelmed by the beautiful spring displays i couldn’t help myself and made a quick purchase or two.

Now you make be thinking the reasons behind my purchases are lame or unnecessary and if you do think that you are on team Mr Dash but i don’t really care what you think you were not stuck in Heaven forced to make purchases, it’s a very serious addiction. I have bought more things from Heaven than any where else and for all you ladies yes that means more shoes, bags and accessories. It’s like my kitchen is my body and i need to dress in all the latest cooking trends.

If you have not ever been into Heaven i suggest you get your bum in their A-SAP, when you make your first purchase and they hand you over the beautifully wrapped goods placed in their perfect black and white paper bag you will be hooked just like the rest of us. I still have not found my Granola, if you have any suggestions please send them through i may have to make my own at this rate.

Lauxes on the Park | Review

Last Thursday afternoon i decided to give Lauxes on the Park a second chance, it was such a beautiful day and I had made plans to have a late lunch with an old friend. The two of us had not been out to lunch for such a long long time so wine was mandatory, once again we picked Nautilus and once again we were both starving. As it was a midweek late lunch Lauxes was fairly empty so we had our choice of seating and of course we chose to sit outside in the beautiful Gold Coast sun. Our drink orders were taken immediately and the waitress returned within moments with our icy cold vinos, we were then placed our food orders. We decide to share an entree and get a main each, we were both devastated to find out that what we believed to be their signature dish- the “Beef Tataki” was no longer on the menu but we were however relieved that they still had the “Chilli Prawns”.

Chilli Prawns

The “Chilli Prawns” included 5 decent size prawns in a crunchy light tempura batter, which is then deep fried and coated in a creamy pale chilli sauce. The creamy sauce i think is Kewpie Japanese Mayo, (which for those of you who have not experienced Japanese Mayo it is the best) there is just the right amount of chilli to create a mild heat and flavour plus its served on a fresh Asian slaw.

OK so i am going to sound like a whinger or maybe even a pig but the one thing that always annoys me at restaurants is- why is it when you are sharing an entree with 2 or 3 people why do they give you an uneven amount? 5 does not divide into 2 or 3 so why wasn’t there 4 prawns or better yet 6 prawns on the plate, if they did that then you would be able to escape that awkward moment of who is going to have it? We all know everyone wants it.  Do we seriously have to cut a prawn in half? Yes, of course we do because if you don’t i guarantee that you will be thinking about that other half later and of course you share it but when you first go in to cut it is the other person thinking, Oh my god are they going to share that?

Next to arrive were our mains, my girlfriend decided on the Eye Fillet and i ordered the Prawn Pasta which i new the second it was put down was a mistake. Don’t get me wrong it looked beautiful, was a very generous serving and loaded with Prawns & Black Truffle but to much diary upsets my stomach and since we had started drinking i wasn’t that hungry any more.

Prawn Pasta 

This dish was nice but way to rich for me, it had at least 7 large prawns served on a bed of pasta linguine with black truffle cream sauce & black truffle carpaccio. I had about two prawns and two mouthfuls of pasta and couldn’t eat any more.

Eye Fillet

My girlfriend ordered the Eye Fillet which to our surprise was also huge, it was cooked to her liking medium rare and served with a potato galette, mixed mushroom ragout, sauteed spinach with Shiraz jus. As the meal was also big she was not able to eat it all, we probably should have not ordered an entree as it wasn’t needed especially for a late lunch.

Our glasses were never empty and fresh ice was placed on the table without asking, this experience was much better than my first attempt.

Although the service was great and the food was beautiful, i do find $145 for lunch for two a little over priced. The food portions were worth it dont get me wrong i just think that most women will not spend that much on a mid week lunch. I think they need to have a mid week lunch special or extend their tapas and entree items and definately bring back the “Beef Tataki” which has always be the star of Lauxes on the Park.

I would recommend you go to Laxues on the Park, a beautiful place in the sunshine but i prefer it at night with the glistening candles that create a secluded atmosphere that it perfect for romantic and intimate dinners.
